I’m Holley.  I’m many things, not limited to wife, daughter, sister, mother of two, elementary school principal, wanna be chef, wanna be blogger, wanna be writer and more!

This is my family:
J man, a 3 year old who loves numbers, letters, sidewalk chalk, broccoli (yay!), macaroni and cheese, basketball and solitaire (the game – seriously, he wins all the time…)

Miss Rae, 15 month old who loves singing, dancing, ketchup and her daddy:).  She’s desperate to keep up with her older brother and thus, has done everything early – walking, talking, temper tantrums, you name it!  She’s an overachiever:)

  Matty B, wonderful husband and father who is quite possibly the opposite of versatile vegan.  Matty is vegetarian, but his favorite things include cheese and ice cream (REAL ice cream).  In addition to most all unhealthy foods, Matty enjoys tennis, golf, hiking and drinking coffee (a shared love:)

I consider myself a versatile vegan.  I can’t say I’m 100% vegan because 1) I hate soy yogurt.  I’ve tried, people, I’ve really tried.  2)  If we go to someone’s home for dinner, I don’t want to cause fear and loathing because I won’t touch anything but the veggie tray.

I’m vegan 90% of the time because it feels good for my body.  Can you call yourself vegan if it’s only 90%?  Well, can you only be 90% pregnant?  No.  Either you are or you aren’t!  However, that’s where the “versatile” part comes in.

My intention behind this blog is to share recipes and ideas for vegan cooking, along with a living scrapbook of my life as I try to balance healthful living, a full time career and an active family.

  3. This is so me right now! After watching Vegucated and Earthlings, Forks Over Knives (and tons more, thank you Netflix!), then reading Eat to Live, our family switched to a “versatile vegan” diet. Versitile for us means 99.9% vegan at home and vegan-to-vegetarian when eating out or at others’ homes. So glad to have stumbled upon your blog and to see others doing the best they can to make improvemts where they can! Beautiful family, btw 🙂

  4. Found your blog through ‘munchkin meals’. I love the phrase ‘versatile vegan’. You’re description totally fits our family. My 14 month old and I are mostly vegan, while my husband tried out veganism for awhile, and ultimately decided he’s more of a vegetarian. Travelling & eating at friends’ homes we are much more flexible (though meat is out of the question).

    Glad to have found another like-minded mama!

  6. I’ve been drawn to your blog several times over the past few days. You’ve got lots of great recipes here! And hey 90% vegan sounds fine to me. My husband and I started out eating vegan Monday – Friday and gradually became almost 100% vegan. I say almost, because we cheat on occasion. Celeste 🙂
