Easter was early

Easter was early this year, wasn’t it?

  
That’s what I’m telling myself, anyway.

  
Because if Easter was early, then it’s ok that my Easter post is late.

   
 
My logic is ridiculous, I know. Also, why is it so hard to take picture of my kids?

  
The theme of Easter this year was carrots in the most unhealthy way possible.

  
In addition to my family, some friends joined us as well. Friends and family make everything more exciting.  
See, they’re obviously very excited.

  
And yes, moms will take photos of anything involving their cherubs.

  
So we feasted on fruit…

  
…two ways.

  
And you know I’ve gotta make scones. It’s what I do. The scones on top are hazelnut and on the bottom are butterscotch. Plus hash browns. Plus veggie bacon. Plus Papa’s ultimate omelettes. No one was mad about it.

And I snuggled a baby and caught up with some friends and drank coffee and had a perfect morning.

  
 And why oh why can’t anyone look at the camera? (Thanks for trying, J Man.)

It must be because Easter was early.

Thursday Thoughts, XLI

XLI=41, for those not fluent in Roman.

1. You know me and Oreos. I had some but put them in the freezer to discourage mindless eating.

  
As it turns out, I really like frozen Oreos.

2. Have you ever seen such a pile of guacamole?

  
 
Chipotle guacamole might be one of my top 10 favorite things and this bowl didn’t disappoint.

3. My sweet friend Lisa sent me flowers. 

  
More people should send flowers to other people. It makes everyone feel good.

4. I have a shutterfly addiction.

  
Aren’t these the cutest cards you’ve ever seen? Send me some flowers and maybe you’ll get a thank you note on one of these…

I can’t tell you how much I needed to hear this today. Now, seriously, send me some flowers.

The one where they went to Vegas

I thought about making this a post about balance while encouraging y’all to splurge on vacation with some bad foods, but enjoy some good foods like salads and go for a run as well.

But the more I thought about it, the more I realized that I really didn’t want to label foods as good or bad, and either way, I didn’t really follow my own advice.

  
Ok, ok, there was one salad.

  
And not only did I run twice, but I also read about running, which has to count for something, even if it was while laying by the pool.

So, instead of my lecture about balance (after all, what do I know?), some thoughts about Vegas.

1. It actually isn’t hard to eat right in Vegas.

   
 
Oatmeal with blueberries, vegan chili, kombucha. All good choices.

2. However, it’s actually really easy to eat awesome as well.

   
   
To name a few…

3. We loved the Bellagio gardens and fountains.

   
 
There really are family friendly things to do here! But…thanks for keeping the kids for us Papa and Grandma!

4. We did a soda taste testing at the Coke store.

  
Some were good, some not so good…

  
  
Above I’m trying Beverly from Italy which scored a 1 from Matty B and a negative 2 from me.

5. The most popular Vegas accessories from other tourists seemed to be a selfie stick and one of those yard long pina coladas.

   

Our most popular accessory was coffee. I know you’re shocked. Also, we don’t believe in selfie sticks, but we do believe in selfies.

  
6. Funny story: years ago when Matty B and I spent a weekend in Vegas, I wore some sexy (ridiculously painful) shoes as we walked up and down the strip. I finally couldn’t take it anymore and took the shoes off and walked barefoot down Las Vegas Boulevard. It’s a miracle that I didn’t catch a disease.

Anyway. Apparently other women have been in this same spot because now they have a vending machine that dispenses emergency footwear.

  
  
Brilliant.

7. We thought about buying a monorail pass.

  
We didn’t. 29,174 steps on Sunday. Be impressed.

8. Well you know I bought a mug.

  
Obviously.

 

No Roll Pie Crust

Sometimes I’m really tired.

Sometimes it’s work related.

Sometimes it’s because I ran.

Sometimes it’s because I didn’t run.

  
Sometimes it’s because this one has lost Lambie for the 11th time in one day and the search party (me) can’t take it anymore.

Sometimes, sometimes, it’s J Man’s over-active imagination.

A couple of nights ago I was putting the kids to bed (Matty B was working late) and J picked up a new chapter book that he got for Christmas. It was one of those somewhat irreverent comic-like books that are supposed to trick seven year-old boys into reading.

We read the first chapter together and he liked the book. “Can I keep reading with my flashlight for a little bit?” he asked. You want to keep reading for pleasure? Yes, my child.

Hugs, kisses, prayers, etc.

90 minutes later, the dude comes sobbing  into my room.

“There was a bad guy in that book and what if I have a bad dream?”

Did you have a bad dream?”

“No, but what if I do???”

I snuggled him in his bed, we said prayers and sang songs and made a list of happy things to think about. No success. J Man ended up sleeping at the foot of our bed until 3:18 a.m. where we had the exact conversation above and he snuggled up to me in bed, blowing hot sleepy breath directly into my face.

Needless to say, I was pretty tired the next day. The same day that I had to make pie for a teacher party. (Does it seem like I’ve been making lots of pie? I have.)

  
But I was tired. So tired. Not so tired that I’d buy a store bought pie (gasp) but definitely too tired to roll out pie crust.

  
So used this no roll pie crust recipe and while it’s not pretty, I was super happy that I didn’t have a pile of flour to clean up afterward. Or a rolling pin to wash.

  
I made a chocolate chip cookie pie and no one was mad about it.

  
The crust was perfectly flaky and it was basically like eating a giant chocolate chip cookie.

  
To date, Lambie is accounted for,  J Man hasn’t worried about the chance that he might have a bad dream for 72 hours, and I found an easy-peasy pie crust recipe.

But I’m still tired.

Five on Friday

1. I have been in the kitchen a lot this week and I love it. The process of cooking and baking is such therapy for me. This week I put on a dinner for a group of student speakers.

And pie. Of course there was pie.

2. Miss Rae was invited to yet another princess birthday party and we went and she loved it, but it’s getting kinda old.

  
Moms, maybe consider a dress like your future career party? Or dress like your favorite food party? Too much princess.

3. I know you know how smart J Man is, but check out this math assignment he created for me.

   
 
Draw a picture and write a number? Crazy.

4. If you couldn’t tell, she picks out her own clothes.

  

  
Fashionista.

5. Two days until spring.

  
I’m already there!

 

Two ingredient pizza crust 

Let me set the scene for you. One mom and two kids snuggling on the couch reading “I am Abraham Lincoln.”

Mom: (certain that her children are brilliant and know the answer to this question) “So Abraham Lincoln was the 16th President, but who is our president now?”

Girl: shrugs shoulders. No clue.

Boy: “Uhhhh…”

Mom: (prompting) “Barack…”

Boy: (jubilant) “Osweiler!!!”

No. NO. Our president is not Brock Osweiler of the Denver Broncos! Utter fail.

I had another fail today. Well, it was a semi-fail.

  
I found a two ingredient pizza crust recipe. Two ingredients? Yes! My life has certainly changed for the better!

The two ingredients? Greek yogurt and self-rising flour. Two ingredients I have!

  
In general, if something seems too good to be true, it is. Sort of.

  
I did not like this pizza. The dough (even when baked for longer than the instructions) was too soft and almost doughy.

  
And it had a sort of sour aftertaste. That’s the Greek yogurt for you.

  
So naturally, I didn’t have high hopes for the kid’s responses. I actually pulled out some hot dogs, just in case.

  
I was, therefore, shocked when the kids loved this pizza. Miss Rae’s exact words? 

“Like it? I LOVE it!”

What do they know? They think the president is also a back up quarterback.

Care to see for yourself?

1 cup Greek yogurt

1 cup self rising flour

Preheat oven to 450. Mix yogurt and flour. Will be super sticky. Knead on a very floured surface until smooth and manageable. Spread onto a pizza stone. Top with desired toppings. Bake for 12-15 minutes.

Enjoy? Maybe.

Cinnamon Brown Sugar Popcorn

Cinnamon Brown Sugar is the best of all the flavors of anything, really.

Pop tarts

Life cereal

Quaker oatmeal (does anyone really want strawberries and cream? Not me)

Even coffee (after all, isn’t that what a cinnamon dolce latte is at Starbucks?)

It started with these cinnamon brown sugar pop tarts.

  
We almost always do scones on Saturday morning, but a mom can only handle so many scones. (For the record, a dad, son, and daughter never get tired of scones.)

  
But dads, sons, and daughters aren’t in the kitchen making said scones, so cinnamon brown sugar pop tarts it was.

  
They were delicious. No scone, certainly, but delightful nonetheless.

  

And then Matty B’s school had a movie night, and while I like movies as much as the next person, I’m not super into watching a movie with 150 other people on a gym floor.

   
So we had our own movie night, complete with popcorn.  

And butter. Browned butter.

  
And of course, since we were on a roll, cinnamon and brown sugar, with a sprinkle of sea salt.

  
Apparently, some of us, (Miss Rae) are suspicious of cinnamon brown sugar popcorn.

  
She was not impressed.
