Lime Zest Spritzer

These limes were almost a lot of things.

 Initially, I bought too many when I was frantically shopping for the college kid taco night. I knew I wanted key lime pie but I had no earthly idea how many limes I would need and I bought five too many.

  

My first solution was to slice them into wedges for kids to squeeze on their tacos. Except we weren’t actually having fish tacos and let’s be real. Does soy burger really call for a squeeze of lime?

  

My next solution was lime curd. You know how I feel about lemon curd, so lime curd has got to be good. But only 1/4 of my family (me) likes any curd and do I really need to eat an entire batch of lime curd by myself? You know that I could.

  
So I made lime zest spritzers! Bring 2/3 cup fresh lime juice, 1/3 cup water, 1 cup of sugar, and 2 (+\-) TBS lime zest to a boil until the sugar is dissolved. Let steep for a couple of hours. You could probably do less time, but I got wrapped up in violin rehearsal and a birthday party and completely forgot about the syrup.

  
Then I mixed two tablespoons of syrup with about 3/4 cup of club soda.

  
Miss Rae is not a fan of “spicy juice” (anything carbonated) so I mixed hers with plain water for limeade (which both kids call “limonade” and I think it’s adorable.)

  
Matty B strained his because he’s a weird pulp-a-phobe. But all declared the final product delightful.

Forget spring fever. Gimme summer.
