Blackberry Mint Soda

In general, Matty B and I don’t necessarily see eye to eye on food.

He says ice cream. I say frozen puréed bananas.

I say fondue, he says fon-don’t.

He says cheese. I say vegan parmesan.

I say “eat your asparagus”, he says NO.

The soda stream is another source of disagreement. Proof. Proof. Proof.

Needless to say, he was shocked when I asked him to pull out his best friend soda stream and fizz me up some water.

You see, I had some mint. Yes, Renee, I’m still using your herbs! I thought about making ice cream and then I realized that my typical frozen banana purée might be gag-worthy with mint.

And we defrosted our freezer (and when I say we, I mean Matty B) and all of a sudden I remembered some frozen blackberries from last summer, and inspiration struck.

Blackberry mint soda. Perfect for summer.

Perfect for someone who enjoys the finer things in life (me, in case you were wondering).

Perfect for someone who steals sugar packets from restaurants and then throws them back in one swallow (Matty B, in case you were wondering…).

I’ve got my work cut out for me…

Blackberry Mint syrup

Ingredients

1 cup water
1 cup sugar
1 cup blackberries (mine were frozen)
1 cup fresh mint (unpacked)
1 lemon, cut in half

Instructions

Combine all ingredients in a medium sauce pan over high heat. Bring to a boil. Reduce heat to low, cover, simmer 10 minutes.

Remove from heat. Keep covered. Let sit for 30-60 minutes. Strain all sediment from syrup.

I mixed with both soda water and unsweetened black tea. Both were delicious.

  1. I’m so excited to try all these new recipes! This is an incentive for me to bring you more herbs… not that I wouldn’t. 🙂
