Spicy Kale Chips

I need an intervention.

June 2 was the last date that I posted a recipe. It was also, interestingly enough, the last day that I ate anything healthy.

I have a number of excuses. They include:

1. Houseguests three weekends in a row.
2. Food poisoning/virus? that made me want either nothing or cold cereal.
3. Vomitous children that made me want either nothing or peanut butter toast.
4. Two trips to Portland in 5 days.
5. Graduations
6. Father’s Day

And if you think I’m exaggerating with #’s 2 and 3, you’re sadly mistaken. I have seriously been living on toast and cold cereal. Have I mentioned my current love affair with apple cinnamon Chex? I’m totally addicted.

So after two full weeks of not really eating anything in my CSA box, and knowing that I need to push the reset button, I did what any normal person does:

I washed and chopped the biggest bunch of garden fresh kale you’ve ever seen and topped it with olive oil and a delicious spice mix.

I have a hard time knowing the time/temperature for kale chips. They’re either burnt to a crisp or kinda chewy.

These turned out perfectly. My recipe for success?

425 for 6 minutes. Flip.
425 for 6 more minutes. Flip.
300 for 5 minutes. Flip.
300 for 5 more minutes. Flip.

Perfection.

And so I ate 1/2 a bunch of kale, and then had cereal for dessert.

It’s a slow detox…

Kale chips

Ingredients
1 large bunch kale
1 TBS olive oil
1 TBS spice mix

spice mix
1/2 TBS smoked paprika
1 TBS garlic powder
1 TBS onion powder
1/2 TBS dried thyme
1 TBS dried oregano
1/2 TBS sea salt
1/2 TBS black pepper

Instructions
Preheat oven to 425. Wash and roughly chop kale. Massage with spice mix and olive oil.

425 for 6 minutes. Flip.
425 for 6 more minutes. Flip.
300 for 5 minutes. Flip.
300 for 5 more minutes. Flip.
