There’s a lot of things that my kids aren’t doing that they should be doing.
+Flossing (according to their pediatric dentist.)
+Eating more fiber and less cheese
+Sharing (depending on the day)
There’s one thing, however, that we’ve apparently gotten right.
They make their beds. They do.
The other day I had just gotten home and was getting ready to jump in the shower. Miss Rae came into our room and declared, “Mommy! You didn’t make your bed!”
But I got in the shower and when I got out, this is what I saw:
She made our bed. My three year old made our California king size bed! Granted, it’s a little rumpled, but it’s better than Matty B could do! (that’s a lie- he actually makes the bed much nicer than I do).
You’re not supposed to reward your children with food, so I didn’t make this pie for Miss Rae. Also, there’s a full cup of coffee in the recipe and no one wants to give more fuel to little miss “I don’t need naps anymore”.
Pros of this pie:
1. Smooth and creamy so flossing afterward is not required.
2. This pie is dairy (and cheese) free.
3. You don’t have to share it with your kids.
Now, to teach Miss Rae how to unload the dishwasher…
2 cups almond milk
1 cup brewed coffee
1/4 cup cornstarch
1/2 cup sugar
1/4 cup cocoa powder
1/2 cup chocolate chips
1 tsp vanilla
Sprinkle of salt
Prepared crust of choice. (I used Oreo)
Combine 1 cup almond milk with cornstarch and whisk over low heat until dissolved. Add remaining milk, coffee, cocoa powder and sugar. Raise heat to medium and whisk until thick, about 5-7 minutes. Remove from heat, add vanilla and chocolate chips and whisk until melty smooth.
Pour into prepared crust. Refrigerate overnight.
