Ugly Broccoli Soup

It’s been a little ugly round these parts.

The weather has been pretty trashy (although I’ve got no room to talk compared to flooding and blizzards in other parts of the country.)


On Sunday I ran 5 miles in freezing rain. It was awesome. I’m lying. It was ugly. Also, Matty B tells me that no one cares about pictures of my feet. I understand, but wanted to show off my yaktraks.

I was kinda ugly to Matty B tonight. He was making me mad because he doesn’t immediately do everything I tell him to has strong opinions and I was a little mean. Pretty mean. It was ugly. Sorry Matty B.


But soup cures lots of things. Things like freezing rain and hunger pangs. Note: this soup does not fix hurt feelings of husbands. The only cure for that is doughnuts.


But let’s call a spade a spade. This soup is ugly. How do you photograph green soup? How do you keep it from looking like…ugly?


Really, truly, beauty is skin deep because this soup is so good and so easy and so good for you, you’ll look right past the sickly green hue and gobble it down.

I can’t take any credit for this Broccoli Bisque recipe. It’s directly from Healthy. Happy. Life. However, below, note my exact measurements.

The concept of this soup could be used in multiple ways- cauliflower, peas, carrots, potatoes, just probably not doughnuts.

Save the doughnuts for a future peace offering.

Ugly Broccoli Soup

2 cups steamed broccoli
2 cups vegetable broth
1 cup raw cashews (soaked overnight)
2 tsp nutritional yeast
1 tsp salt
1 tsp granulated garlic.


Purée everything in a vitamix. Warm in a medium saucepan to desired temperature.
