Healthy Vegan Chocolate Mousse

Let’s talk about disappointment.

Someone was disappointed that it wasn’t her birthday.


Hint: It wasn’t me.

Someone was disappointed that this isn’t mom-approved preschool attire.


Hint: I was that mom.

Someone was really disappointed that the Broncos lost the Super Bowl.

No picture necessary.

Hint: That was me.

Someone made an absolutely disgusting dip for the Super Bowl veggie tray.


Hint: Me again.

You’ll note that the tray above doesn’t boast a dip of any sort. That’s because what I made was so awful. I had the right idea but made a fatal mistake using two large cloves of garlic. So strong. So bitter. So disappointing.


The dip had a silken tofu base. I had already wasted 1/2 a package of tofu, what to do with the other half?


And after all the disappointment of the weekend, this healthy vegan chocolate mousse was a pleasant surprise!

Silken tofu, melted dark chocolate, cocoa powder and vanilla. That’s it. After a few hours in the fridge, it was thick and delicious.


Miss Rae will be 3 soon enough.

Someday J Man will have a fully developed “clothing filter”.

And out of the depths of disappointment, this delicious recipe was born.

Now, to avoid Facebook and my Seahawks obsessed friends for the next six weeks…

Healthy Vegan Chocolate Mousse


1/2 block silken tofu (8 oz.)
1 cup dark chocolate chips, melted
1 TBS cocoa powder
1 tsp vanilla
Sprinkle of salt


Combine all ingredients in a blender or magic bullet until smooth. Divide among four small ramekins. Refrigerate for at least 2 hours.

  1. Mmmmm, love that you found a silver lining! We bought 6 packages of organic tofu (extra firm tho) from Costco and I need to make some plans for those bad boys in the next fews weeks. Intimidating!
