Raw Vegan Peanut Butter Blossoms

We’ve got a mouse problem in our house.

And it’s not what you’re thinking. The mouse causing the drama in our house wears a pink bow and, for us at least, is a money guzzling machine.

Yes, the mouse I’m referring to is Minnie.

For some reason, both my kiddos are smitten with Minnie- Miss Rae has an almost unhealthy obsession. The issue stems from the fact that for Christmas, J Man got a Mickey Mouse Clubhouse book, complete with a Disney family of “action figures”, Minnie included.

Minnie is worth gold in this house. Miss Rae will intentionally hide her so that J Man can’t find her. Minnie has elicited tears from both children and major quarrels.


This is a photo of all the dib-dabs of nuts I have in my pantry. Off to the right side you might notice Minnie. Yes, Minnie had been confiscated.


As Miss Rae was sour enough for all of us, we needed something sweet. Check out her shirt. Do you need further evidence of the obsession?


With all the dib-dabs of nuts, I created these seriously delicious raw vegan cookies. I call them peanut butter blossoms because they consist of a layer of chocolate and a layer of peanut butter.



Matty B will tell you right away that these don’t taste like classic peanut butter blossoms with the Hershey kiss stuck in the middle. But you know what?



Real peanut butter blossoms make me feel guilty. And I don’t have time for guilt, I’m too busy searching for Minnie. (Places Minnie has been found: in the silverware drawer, in Miss Rae’s bike bag, in an Easter egg.)


These cookies make me feel virtuous. The natural sweetness of the dates and just a few tablespoons of pure maple syrup are the only “sugars”. The nuts are super filling, so you only need one…or two…:)


The chocolate layer is bittersweet- kinda like my girl on days when she doesn’t have total control of Minnie.

The peanut butter layer is delightfully nutty- kinda like my girl on days when she doesn’t have total control of Minnie.

I added large flakes of sea salt to the top. Best choice ever. Well, that or buying two Minnie Mouse figurines. That would’ve been the best choice ever.


Raw Vegan Peanut Butter Blossoms


Chocolate layer
1 cup walnuts
1/2 cup coconut
1/4 cup cocoa powder
2 TBS maple syrup
1/2 tsp vanilla
Sprinkle of salt

Peanut Butter layer
1 cup hazelnuts
1/2 cup dates
1/2 cup almonds
1/2 cup peanut butter


For the chocolate layer, add all ingredients to a food processor. Pulse until sandy. Press into the bottom of a pie tin.

For the peanut butter layer, pulse the dates in the food processor and then set aside. Pulse remaining ingredients, adding dates at the end. If you don’t do it this way, you’ll get large chunks of dates in your cookies. Press PB layer on top of chocolate. Top with large flake sea salt. Refrigerate. Cut into bars (or with cookie cutters) and serve.
