Cardamom Cookies

When it’s super cold outside…

…you need cardamom cookies.

When it’s super cold outside and you decide to go sledding…

…you need cardamom cookies.

When it’s super cold outside and you decide to go sledding and your beloved husband forgets the children’s coats

…you bundle them up anyway in coats that are 14 sizes too large…and you really need cardamom cookies!

(In his defense, that morning I slept in while he got up with the kids and he remembered all other required snow paraphernalia.)

Coats are really just details anyway…

In the grand scheme of life, cookies always trump coats.

Cardamom Cookies
(Adapted from Post Punk Kitchen)

1/4 cup sugar in the raw
1 tsp ground cardamom
1/2 cup olive oil
1 cup brown sugar
1/4 cup maple syrup
3 TBS pumpkin spice soy milk (you could use regular non dairy milk here)
2 tsp vanilla
1/4 tsp salt
2 1/2 cups WW pastry flour
1 tsp baking soda
1 tsp cardamom

Combine sugar in the raw and 1 tsp cardamom. Set aside.

Mix oil, brown sugar, syrup, milk and vanilla in a medium bowl.

Combine remaining dry ingredients. Add brown sugar mixture.

Stir until a soft dough forms. Refrigerate at least one hour.

When ready to bake, roll dough into small balls and dip in sugar/cardamom mixture.

Bake at 350 for 12 minutes.
