Coats are really just details anyway…

Cardamom Cookies
(Adapted from Post Punk Kitchen)

Ingredients

1/4 cup sugar in the raw
1 tsp ground cardamom
1/2 cup olive oil
1 cup brown sugar
1/4 cup maple syrup
3 TBS pumpkin spice soy milk (you could use regular non dairy milk here)
2 tsp vanilla
1/4 tsp salt
2 1/2 cups WW pastry flour
1 tsp baking soda
1 tsp cardamom

Instructions
Combine sugar in the raw and 1 tsp cardamom. Set aside.

Mix oil, brown sugar, syrup, milk and vanilla in a medium bowl.

Combine remaining dry ingredients. Add brown sugar mixture.

Stir until a soft dough forms. Refrigerate at least one hour.

When ready to bake, roll dough into small balls and dip in sugar/cardamom mixture.

Bake at 350 for 12 minutes.
