Vegan Peppermint Fudge

We like our chocolate.

When we were at Wallowa Lake a few months ago, we found this amazing chocolate shop, Arrowhead Chocolates.

The shining star was their hot drinks. The magical part was the melted down chocolate they used. For either hot chocolate or a mocha, you could choose between milk, dark, or white chocolate. Then the barista would bring you the chocolate covered spoon they used to make your drink.

Thus, the chocolate covered baby girl above.

Needless to say, we went back the next day too and licked our mugs clean.

I’ve been thinking about that chocolate. I’ve been thinking about Christmas. Those two thoughts combined can only mean one thing:

Fudge!

This fudge is peppermint for two reasons:
1. After chocolate and peanut butter, chocolate and peppermint is my favorite combo.
2. In order to make this vegan, I substituted coconut milk for heavy cream. Matty B swears that he can taste coconut anytime I use coconut milk and he doesn’t like it. I can’t eat a pan full of fudge by myself, so I thought that peppermint would mask the coconut flavor pretty well.

Speaking of pans full of fudge, this recipe makes a very small amount. This was intentional. If you’ve got trays full of Santa cookies in your freezer and leftover apple butter bars on the counter, you don’t need 5 lbs. of peppermint fudge. This recipe makes enough for 3 adults to satisfy their chocolate craving and 2 children to smear chocolate all over their faces.

Oh! Did I mention that there are four ingredients and you make this in the microwave? I’m telling you, this is the perfect recipe in every way! Festive, vegan, fast, easy and small.

And other than the “easy” descriptor, this fudge is just like Miss Rae.

Although if this fudge were to truly emulate her personality, it would have a healthy dose of cayenne pepper…

Vegan Peppermint Fudge

Ingredients

3/4 cup dark chocolate chips
1/3 chilled coconut milk (from a can, top layer)
1/4 cup crushed peppermint candies
4 peppermint Oreos

Instructions

Crumble Oreo cookies into a small. (Personal size) casserole dish.

In a microwave safe bowl, heat coconut milk until just hot. Mix in chocolate chips until melted and smooth. Add peppermint candies. Pour over Oreos. Chill at least 2-3 hours. Cut into 8 small squares and serve.
