Vegan Snowball Cookies

If it’s colder than 12 degrees where you live, disregard this post. I have no room to talk.

It’s 12 degrees in Walla Walla. If it’s that cold and you decide to abandon your family and pack up and go to Monaco where it’s a balmy 41 degrees, you get what’s coming to you.

My parents are on a trip to Monaco, via London and to say I’m jealous is an understatement.

So, tonight, as we’re baking snowball cookies (aka Russian tea cakes) in honor of the snowball like conditions outside, and I realize we don’t have butter OR walnuts…

…and it was soooo cold outside (did I mention 12 degrees?) and the last thing I wanted to do was go to the store…

…and mom and dad might not know it, but I have a key to their house…and it’s just 100 paces away…

…and they not only had walnuts, but also EARTH BALANCE, and and pine nuts (because if you have enough money to go to Monaco, certainly you have enough money for giant bags of pine nuts. Note: we have neither Monaco nor pine nuts.)

But we do, in fact, have snowball cookies.

And they were 100% melt in your mouth and I didn’t steal the ingredients because the batch made an extra dozen that I will put in the freezer and gift to them, when they return and if they bring me a present from Monaco.

Do I look sorry?

Nope.

Vegan Snowball Cookies

Ingredients

2 1/3 cups flour
1/2 cup powdered sugar (plus more for dipping)
1/4 tsp salt
1/2 cup walnuts
1/4 cup pine nuts
1 cup earth balance vegan butter
1 tsp vanilla

Instructions

In a food processor, combine flour, 1/2 cup powdered sugar, salt and both nuts. Pulse until nuts are finely ground. Add butter and vanilla. Pulse until a sticky dough forms.

Roll into 1 inch balls, baking at 400 for 12 minutes. Let cool slightly, them roll in powdered sugar. Let cool completely, then roll a second time.

  1. Ha ha youre caught……how are puppies in this cold spell. Sunshine a whopping 56 deg. here in rome. Waiting to board the Jade. Well be looking for those cookies.
