Cilantro Lime Pesto

I don’t like it when people touch my stuff.

There. I said it. Matty B is frequently on the receiving end of this angst and he’s a good man for hanging tough.

It all started with my iPad charger. I keep it plugged in on my side of the bed. Since I use it for both my iPad and my phone, it’s frequently in use. I never move it.

Somehow. Somehow, it was “borrowed” and not returned. Certainly it wasn’t Matty B, who, conveniently enough also uses an identical charger for his devices. It must have been the kids. Or great grandpa. Or maybe the cleaning lady?

When it magically reappeared, I marked it. That’s right. I pulled out a sharpie to lay claim to what is rightfully mine.

I don’t like it when people touch my stuff. Future reference: if you run across an iPad charger with a black sharpie-made dot, you best sleep with one eye opened until it is returned to ME!

I don’t like it when people touch my stuff. Apparently, however, rice is the exception to the rule.

I made this cilantro lime pesto. A nod to the basil pesto of yore, it has a bright citrus bite that tastes nothing like soap (to all of you cilantro haters out there (Hi Sharon!))

You could mix it into pasta or spread it on a baguette. Both lovely choices.

I tried it with brown rice and was happy with the results. Once you mix it into a starch, you may want to add a little extra salt as your base may tame the flavor.

This was good. So good that I put the leftovers in a container marked with a black sharpie-made dot.

  1. Wow the title got me! I love anything with cilantro and lime, sounds amazing!

  2. Thanks for the nod. I’m sure your basil pesto is just as good and doesn’t taste like soap. I love most of your recipes. Amazing, that magically disappearing charger.
