Matty B would call himself a root beer connoisseur. Once, for his birthday, I bought every random brand of bottled root beer I could find and gave it to him as a sampler pack. The only thing that would’ve made him happier would be if I had served him that root beer wearing a short plaid skirt and knee socks. I blame Britney Spears “Hit Me Baby One More Time” music video.
For Matty B, it’s not just the quantity of root beer, but the quality. (Except for that one time at Downtown Disney when he ordered a root beer for $6 but it came with free refills and he decided that he was getting his money’s worth, by golly, so he drank at least 6, if not more, root beers that evening. I was so proud…)
So when we were in Boise last weekend, we went to a fun little burger joint called The Boise Fry Co.
They had a vegan burger option (made of quinoa) and an awesome French fry menu. Basically, you choose your potato and your cut and they make your fries to order.
And just when you thought it couldn’t get any better, they had homemade root beer on tap! Matty B was in heaven!
We placed our order and found a table. And then we tasted our root beer.
It was awful. Very bitter, not sweet, with a strong spearmint flavor. I didn’t even finish mine. Matty B choked his down and then went to ask for the other “on tap” option: orange basil. Even worse.
The burgers and fries were good. The root beer was gross.
So, I was inspired. Inspired by root beer. And if I were to take another one of Matty B’s very favorite things (doughnuts) and add root beer? Well, certainly I would go down in the wife hall of fame for that!
When I came home from the grocery store with a two-liter of root beer, Matty B was intrigued. I never, repeat NEVER, buy soda. He probably assumed something was up. Maybe I’d purchased some super expensive boots (I’ve been eyeing these) or maybe I “accidentally” threw away his rock/mineral/shell collection, or maybe I was making tofu for dinner and was “innocently” trying to sweeten him up.
No no. None of the above.
I made Matty B root beer doughnuts because when I had a semi meltdown because he leaves piles of receipts and newspapers everywhere, he cleaned them up.

I made Matty B root beer doughnuts because living with Grandpa means that Matty B has done many unpleasant things that he wouldn’t have to do, but he does them cheerfully.
He loved them, by the way. And I didn’t even have to wear a short plaid skirt with knee socks:)
Root Beer Doughnuts
1 1/2 cups flour
1 tsp salt
2 tsp baking powder
1 1/4 cups rootbeer
1/2 cup molasses
3/4 cup brown sugar
1/2 tsp baking soda
1/4 cup oil
1 tsp vegan egg replacer
1 tsp nutmeg
1/2 tsp cardamom
1/2 tsp ginger
2 tsp vanilla
3 turns of black pepper
1 cup powdered sugar
1 tsp cocoa powder
3 tsp root beer
Preheat oven to 375.
Grease and flour doughnut pan. I skipped this step and was sorry.
In a medium bowl, combine flour, salt and baking powder. Set aside.
In a large saucepan, over medium heat, combine root beer, molasses and brown sugar until sugar has dissolved. Add in remaining ingredients, being careful adding baking soda as it will foam up! Add warm root beer mixture to flour. Whisk until no lumps remain. Pour into doughnut pan. Mine has six holes and I had leftover batter for two more. Bake for 15-18 minutes.
While baking, whisk glaze ingredients. Drizzle over warm doughnuts.
