Vegan=Weird? And Strawberry Vinaigrette

Just because it’s vegan, doesn’t mean it’s weird.

To clarify, just because I’m vegan doesn’t mean I’m weird.

List of things I purchase at normal stores for the normal people in my life, that just happen to be vegan:

1. Life cereal
2. Special K with Red Berries
3. Sun Chips
4. Teddy Grahams
5. Rice-A-Roni Spanish Rice
6. Old El Paso Vegetarian Refried Beans
7. Mission Flour Tortillas
8. Betty Crocker Bisquick

Now, knowing me as you do, you might point out that these are all processed foods.

I get it.

I get it.

But it’s nice to know that you don’t have to always put tofu or nutritional yeast into something in order for it to be vegan.

Perfect example? This Strawberry Vinaigrette.

Most of the salad dressing recipes I’ve shared with you have things like cashews or miso or tahini. Stuff you may or may not have in your pantry. Stuff you may or may not want to eat. Stuff that you may or may not be willing to tell your family about without them leaving the table and dialing 1-800-Dominoes. (Thank goodness that’s not actually their number. I’d have a much harder time controlling Matty “pizza” B and his daughter, pizzette, aka, Miss Rae.)

There’s the delicious Avocado Balsamic Dressing.

Or maybe you might try my Tahini Miso Dressing.

My Maple Ginger Dressing is like candy.

My version of 1000 Island tastes just like the original.

But all of the above dressing recipes are complicated compared to the ease of my Strawberry Vinaigrette.

I hesitate to even call this a recipe because it’s so simple. It’s like posting a recipe for toast. Who would do that? Oh wait. Joy, my love, the Baker did and I still think she’s brilliant.

There are 3 ingredients. I’ll bet you $4.26 you have them in your pantry/fridge.

Olive oil
Apple cider vinegar
Strawberry jam

Magic bullet.
Old school blender.
Mini food processor.
Martini shaker? Maybe.

Whatever you’ve got to blend it up will work. I drizzled the finished product over a mix of spinach and romaine and topped the whole thing with diced English cucumber, strawberries (of course) and sunflower seeds.

Totally delicious.
Totally normal.
Totally vegan.
Totally not weird.

Just like me.

Strawberry Vinaigrette

1/4 cup olive oil
1/4 cup apple cider vinegar
2 TBS strawberry jam

Purée all ingredients in blender. Drizzle over greens.

  1. The strawberry salad dressing really sounds yummy and I’m not a big salad eater (sorry). I think I’ll give it a try.
