Taco Tofu

Following is a list of things Matty B doesn’t like. Cry for me a little in your heart…

All condiments other than salsa,(Including all salad dressings, ketchup, mayo, mustard and hummus), all soups, most vegetables, all berries, eggs, tofu, baked potatoes, and all meat products.

I found this link for the top 25 most hated foods. Other than the meat products, I like them all!

Tofu.

Matty B shares the sentiments of the haters. And the biggest complaints about tofu? The weird texture and the lack of flavor.

There’s a right way and a wrong way to prepare tofu.

1. You must press it. Fancy people have a tofu press. I have paper towels and heavy books. The idea is to press the moisture out so you can marinate the tofu and add some flavor.

2. Marinate. I used salsa since I was going for a Mexican flavor, but soy sauce works well too.

3. Cornstarch is your friend. I’ve used lots of “breading” type materials. Cornstarch with some seasonings works like a charm.

Flour tortilla with taco tofu, avocado, tomatoes, corn and Angela’s pumpkin Cheez sauce.

Of the above ingredients listed, Matty B would eat the tortilla and the corn. Preferably not touching.

I give that man a harder time than he deserves. Following is a list of the things Matty B does like that I really do appreciate:

Pesto, falafel, enchiladas, pasta, broccoli, peas, bananas, apples, carrots, samosas, curry, mashed potatoes and rice.

And candy.

And cookies.

And high fructose corn syrup.

Good thing I’m so healthy. In 30 years when he’s old and frail with brittle bones, I’ll be able to take care of him. Maybe he should buy me a new frying pan to pay me back.

Taco Tofu

Ingredients

1/2 block pressed tofu
1/2 cup salsa
1/4 cup cornstarch
1 tsp taco seasoning
1 TBS oil

Instructions

Cut tofu into chunks. Marinate pressed tofu chunks in salsa for 30+ minutes. Combine cornstarch and taco seasoning. Drain tofu and roll in cornstarch mixture. Fry in oil on all sides until crispy and brown.

I love all the non animal stuff on that list too (and vegan versions of most of the dairy bits) but I guess I should count myself lucky that my Mr loves food as much as I do (and is veg with me). The only thing I really am not allowed to feed him is cilantro. I can use coriander in things like indian or latin stuff but I must be cautious hehe.

  2. Tofu is one of my favourites too, as well as just about every other non-animal food on the planet! My partner’s a meat eater, and a Type 1 diabetic so our eating choices are VERY different. We rarely get a chance to cook together which is a shame because we both love cooking, but next week he’s participating in the Meat Free Week challenge so hopefully this will give us a great reason to cook some meals together.
