Taco “Meat”

The other day, J Man was being very quiet. Suspiciously quiet. Further investigation showed this…


My buddy had found a map and some letter blocks and was spelling out the different countries of Africa. Confession: I didn’t know that Lesotho was a country, much less that it was located in Africa.


This one cracks me up because the “nnan” underneath? J Man told me that was Mozambique in Spanish. Love this kid! He’s nuts, but I adore him!

What else is “nuts”? The filling for my tacos!


After my lunch last week, I was very intrigued by the taco sunflower seed pâté. When the Meatless Monday Challenge was walnuts, I knew I had to experiment.


I soaked 1/2 cup walnuts in water for 4 hours and then just chopped by hand, adding in some tacoish seasonings.


To be honest, I wasn’t thrilled with the product immediately following. The spoonful I tried seemed sort of…bland.

I’m glad I let it sit overnight, because this was today’s lunch:


Lettuce wraps with walnut taco “meat”, avocado, cucumber and salsa.


Allowing the nuts to ‘marinate’ overnight was key. This filling was so flavorful and kept me full for a long time.

Blew me away.

Wonder how you say that in Spanish? Let me ask J Man…

Taco “Meat”


1/2 cup walnuts, soaked in water 2-6 hours.

1/2 tsp taco seasoning
1/4 tsp chili powder
1/4 tsp cumin
1/4 tsp salt
1/4 tsp garlic powder


Spread walnuts on cutting board. Sprinkle with seasonings and chop to desired consistency. Store in airtight container overnight in fridge. Use in place of meat in tacos, salads, etc

  1. What a fun idea! Tacos are one of the things I crave when i’m on a vegetarian diet and this sounds like such a perfect substitute.

  2. Great idea for walnuts – I remember making a walnut meat when I first stopped eating meat, but it’s been ages. Thanks for sharing!
