Roasted Turnips

Better With Veggies

Truth: Before today, I had never tasted a turnip. That is, unless my mom snuck it into my dinner somewhere, but even if she had, as a joke, she’d never be able to keep it a secret. She’d be dying to tell me or tell my sister or tell someone, so I’m certain that turnip has never crossed my lips.

It’s not that I have anything against turnips. I just never had the reason to try one. Until today!

And for this reason alone, thanks to Heather for her great Meatless Mondays challenge. This link-up has been a great opportunity for me to push myself out of my veggie box!

So, turnips.

Without having ever tasted one of these bad boys, I did what I do with all unknown veggies – I roasted it!

Do you peel turnips? I didn’t. I washed and chopped and then doused with olive oil, salt, pepper and garlic.

The oven is hot – 400 (and dirty, apparently…) and after 10 minutes I gave them a stir- 20 minutes in all.

I was careful not to crowd the pan and they browned beautifully!

They tasted like sweet potato. Crisp on the outside, soft on the inside.

Win.
