If there were a prize for ugliest food consumed in one day, I just might win.
Breakfast? Not only is the light terrible, but oatmeal just isn’t that photogenic.
1/2 cup rolled oats, 1 TBS flax seed, 1 TBS cocoa powder, 1/2 banana, 1 TBS PB, 1 TBS almonds. Eaten in the car, while listening to “If you’re happy and you know it” and handing J Man random snacks. The oats were delight, but look pretty…ugly.
Now check out lunch. Lunch should totally win the ugly prize:
What’s in that pile of ugly? 1/2 a sweet potato, roasted Brussels and broccoli, caramelized onions, a boca burger and a TBS of pesto. It’s so weird, it’s almost embarrassing. This lunch is called “we’ll be out for the holiday and I’m bound and determined to clean out the fridge beforehand”. True story: it was really tasty.
The snack of apple and almond butter isn’t ugly, but sure is boring. Are boring and ugly the same thing?
The school was having a fundraiser so we spent the evening at Barnes and Noble and California Pizza Kitchen. Dinner was a roasted veggie salad from CPK. I ordered the 1/2 portion and was sorry that I did because I liked it a lot.
This was surprisingly good, although there were some really ‘woody’ pieces of asparagus.
After I got home from the fundraiser, I was bonkers overwhelmed with:
Matty B’s birthday is in hours, and not all of his presents are here yet.
Thanksgiving is in hours. I need to make an apple pie.
I need to pack J’s snow pants and does Miss Rae have any clean socks and also I should pack myself.
So I stress ate a few of these…
But these are healthy (I’m not lying- recipe review coming soon!) so there was no guilt attached, and for the first time today, that’s not ugly…
Pretty or not, they gave me the motivation to bake that apple pie.
