59 Minutes

The other day I got home from work at about 4:30. The house was dead silent. Eerily silent. No car in the garage. I called Matty B.

“Where are you?”
“I took the kids to the park. We’re digging in mud. They’re having fun, so we probably won’t be home for another hour or so. Just sit down and relax.”

Is my husband the best man in the world? Other than his collection of “Lowe’s” shirts, this statement is true.

A whole hour? To myself? Without children? Mine or other people’s? I used one of my sixty minutes to stand in disbelief, not quite sure what to do.

The other fifty-nine? They were put to good use.

I cleaned the two upstairs toilets. TMI? Sorry.

I changed into sweat pants.

I made a cup of tea.

I hid 5 “Lowe’s” t-shirts. (Ok, I didn’t, but I should have…)

I turned on some jazz.

And then I made these cookies from For The Love Of Kale.


I didn’t have high hopes. I mean, the blog title itself doesn’t scream “delicious baked goods”.


I grossly underestimated these gems! They were so good! Granted, we scarfed them down warm from the oven, but still! They were fallish, and spicy, and while they weren’t as much of a cookie as they were a muffin top, we really enjoyed them.


My 2nd favorite thing about these treats? (The 1st would be the penuche-like frosting), was the amount yielded.

Let’s have some real talk. I love cookies. I mean, love cookies. Ice cream? Eh. Candy bars? Really don’t care. Cookies? Oh, cookies are my “just walk away, you’ve already had 4, you don’t need any more, no matter how good they are, no matter how bad your day was, no matter that it’s Thanksgiving in a month and you should start practicing being thankful right now, you don’t need another bite!” downfall!

Matty B loves cookies too. However, he loves cookies in more of a “I’m not sure the next time cookies will be available to me, Holley keeps stealing all my joy by never buying sweets of any kind, and I must gorge myself when they’re actually present” kind of way.

Shocking as it might be, the kiddos also love cookies. Therefore, this recipe was perfect, because it made 8.

8 cookies is the perfect amount for this family.

2 for me.
4 for Matty B.
1 for Miss Rae.
And 1 for J Man to face plant in…



When the fam got home from their dirt extravaganza, Matty B was slightly irritated that I hadn’t used the time to sit on the couch and veg out.

One bite of this, and he’s already planning the next 59 minute vacation…
