What I Ate on the Road

Spooky Snacks and Healthy Halloween Treats

I’m actually kinda excited about today’s WIAW because I’m completely out of my comfort zone of ‘normal Holley foods’.

Matty B and I are on our way back from a fabulous vacation to Lake Tahoe but we drove (yes, we’re crazy) so this is a day of ‘travel eats’. Definitely not typical, but real, nonetheless:)


Before we hit the road I had instant grits with some almond butter and jelly mixed in and a banana. Then, on the way out of town Matty B and I split an amazing blueberry muffin from Sweet Pine Bakery in South Tahoe. So good! I have absolutely no reason to believe this muffin was vegan, but I didn’t really care. It’s a vacation mentality that I’ve gotta get out of! I did have a soy latte, so I haven’t completely fallen off the wagon…



Then we drove. A lot. I snacked…



The snack theme was apparently “apple”. This larabar was good, but my favorite flavor is still peanut butter cookie (shocker, huh?)

Then we drove. A lot. There was loud, obnoxious singing (both Matty B and I were guilty of this, although he wins the prize for highest note reached:). Both Roxette and Heart are necessary for a road trip:)

We stopped at Mt Shasta for lunch. This was a total win for me! I had sad visions of a subway sandwich with no meat, cheese or mayo (which wouldn’t have been the end of the world, but not my fave), but we found a little natural grocery store with a sandwich counter in the back. I got the best sandwich!



WW bread with vegenaise, pesto, guacamole, sprouts, tomato, cucumber, lettuce, and onion. Do you see how awesome this sandwich was? Especially because I was expecting truck stop food.



A couple of vegan ginger cookies were shared between Matty B and I, followed by a ginger tea. So apparently the theme is apples and ginger:)

And then we drove some more. I whined about the blood clots that were surely developing in my legs. I read some more “Veganomicon”. We stopped in Eugene for gas and I perused the gas station aisles, desperate for something healthy. Am I crazy? I think the blood clots were getting to me…


We got home, I surveyed the empty fridge, and opted for a bowl of cereal with soy milk.

This was definitely not a normal day. Very low on fruits and veg, but tomorrow’s another day, right?

  1. Yum! Love road trip food. I usually stock up on snacks at trader joes. Lots of dried fruit, dips, crackers, and nuts! If I forget to buy stuff in advance I usually get sour skittles and corn nuts from the convenience store. Healthy, right? 🙂

    That cereal looks great! Eating on the road is definitely hard. We actually don’t go on road trips more than 2 hours very often. With 3 kids I think that would be close to torture!

    • I agree 100% – if J Man and Miss Rae would have been along it would have been awful! I mean, I love my babies, but if I was grumpy in the car, I can only imagine how they would have been!

  3. Love the Mt. Shasta area, so pretty and small town charm!

    • We took the first exit and were somewhat dismayed because all we saw was a junky diner and a tire store. Fortunately we kept driving and got into the heart of town – you’re right – small town charm!

  4. your sandwich looks and sounds delish!! I usually pack some sort of fruit, lots of apple, pb & hope to find a subway or some sort of healthy fast food place along the way.

  5. WOW! I’ve never seen such a healthy eat at a truck stop! So many healthy eats on the road, good for you for not falling into the road trip trap of crap food lol. Apples and ginger are great together, right?! Lovve that Lemon Zinger btw or anything Tazo for that matter 😀 thx for sharing!
